Super fresh, this is striking given the 10 years in the cellars; it has a fine citrus nose - plenty of lemon, grapefruit, yellow chalky notes, some lighter floral elements too. The palate is super dry (dosage at 3-4g) and there's a silky, sherbet-like texture, smooth, fine and long. The citrus flavours give way to the driving surging acidity, thunderous acidity, really driving and powerful. The finish twists very slowly through to light-toasted cashew fruit flavours, but lemon citrus prevails. This is thrilling Champagne. Disgorged 22nd October, 2013. Drink from 2016.

A wine that really needs time in the glass to show at its best, Bollinger’s 2002 Champagne R.D. comes from a total 23 different crus (71% being Grand Cru) and is a 60/40 split of Pinot Noir and Chardonnay. Disgorged in 2013 after spending 11 years in bottle, it offers a dry, savory style that quickly morphs toward more stone fruits, toasted nuts, dried earth and exotic spices. Deep, pure, and incredibly chiseled on the palate, with a gorgeous texture and great finish, this is a Champagne I’d decant if drinking any time soon. The dosage is in the 3-4 grams range, and while it’s certainly on the dry/savory end of the spectrum, it offers incredible complexity and depth.

Bollinger's 2002 R.D. is striking in its beauty. Silky and caressing on the palate, the 2002 impresses for its exceptional balance and harmony. In 2002 so many Champagnes are ripe and explosive in style, but the 2002 R.D. is quite restrained by comparison. Hints of apricot pit, smoke, almonds, spices and pears ring out on the super-finessed, inviting finish. The 2002 is going to be nearly impossible to resist in its youth, but it should also age impeccably. All the elements are in the right place. Dosage is 3-4 grams per liter.

I've encountered some bottle variation with Bollinger's 2002 Extra-Brut R. D., but this example, disgorged in 2016, was showing especially well, offering up a deep bouquet of dried fruits, orange zest, mocha, spices, English walnuts and hazelnuts. Full-bodied, broad and enveloping, with a pillowy, seamless profile and a fleshy core, it concludes with a long, sapid finish. With two grams per liter less acidity than the more incisive 2008 (which has not yet been released as R. D.), the 2002 is a giving, expansive wine that is drinking well today.

This late-release version of the vintage wine from Bollinger was 13 years on the lees before being disgorged in May of 2017 with an extra-brut dosage of just 3g/L. The initial blend was 60% Pinot Noir, 40% Chardonnay, fermented in cask, and aged under cork. The wine is a sublime expression of the late-disgorged style, both very fresh and showing characteristic notes of coffee and toast that long lees ageing brings. The texture is very lively and crisp, and the energy of the 2002 vintage carries this to an immense finish. This wine should age for decades.

At this stage in the lunch, my notes were getting rather sparse, but this did have an aroma of mushroom on the nose initially, only to become much fresher and tighter on the palate, especially with the Comté cheese. (JH)

Disgorged 17 May 2017. 60% Pinot Noir, 40% Chardonnay (usually more like 30%). Incredibly intense aromas – baked apple, cinnamon, freshly baked bread. Conventional and recognisably champagne, but to a greater, more intense degree. Some creamy coffee on the palate and wonderfully savoury salinity on the finish. Very, very long persistence. Disgorged 17 May 2017. Dosage 4 g/l. Tasted blind. The first pair with identical colours: toasty deep straw. Zesty, citrus-peel aromas. Lots of acidity and zip. Already a pleasure to drink but by no means at peak. Very clean and brisk. Just a hint of prunes! (JR)
